    A distinct 2–2.5% salt-by-cabbage-weight procedure using 68–72°F for about 7–14 days, with its own brine-loss and yeast-scum instructions. These values are not averaged into the selected Penn State manual.

Scope notes

  • “Revised 2015” or “revised 2009” is the underlying publication date displayed by NCHFP, not a claim that the webpage itself was published then.
  • UMN’s pH 4.60 endpoint and nine-month refrigeration duration belong to its generalized workflow.
  • CSU’s salt percentage and 7–14 day window belong to its separately named procedure.
  • NCHFP’s dill-pickle formula applies to its specified cucumbers, vinegar, water, salt, and container-capacity basis.
  • The current manuals are documented and not reproduced by HowToFerment.
