Reference release 01

From what you have
to what you want to ferment.

Find a clear manual for the fermentation path between them—what to do, what to watch, when it is ready, and what can change.

01 A diagram can orient you. It cannot certify a ferment as safe.

Documented manual 01
Cabbage Sauerkraut

One selected 5 lb procedure, with its salt basis, temperature window, checkpoints, endpoint, and stop signs kept intact.

Documented manual 02
Pickling cucumbers Fermented dill pickles

A capacity-based NCHFP procedure that keeps cucumber size, salt, 5% vinegar, water, temperature, and storage in context.

Procedure in research 03
Napa cabbage Kimchi

The pathway is mapped, but this release does not yet have one source-backed canonical procedure to publish.

Procedure in research 04
Peppers Fermented peppers

A discovery entry only. A generic brine formula would hide the procedure-specific evidence this manual still needs.

Procedure in research 05
Peppers Fermented hot sauce

Mapped separately from fermented peppers so the later blending, acidification, and storage decisions are not blurred together.

Procedure in research 06
Garlic Fermented garlic

Listed for discovery, without borrowing a wet-brine formula from a different vegetable or container setup.

Procedure in research 07
Carrots Fermented carrots

The transformation belongs in the map; the instructions stay withheld until one suitable tested procedure is selected.

A calendar is not a checkpoint.

Time still matters. But a useful manual also tells you what state to look for, what remains unresolved, and what means stop.

01

Prepared

Inputs and vessel match the selected procedure.
02

Starting

Salt, liquid, cover, and temperature are in place.
03

Active

Expected changes are read in their procedure context.
04

Ready

The named endpoint—not a generic day count—has been reached.
!

Stop

A listed discard sign overrides the normal timeline.

How a manual earns its label

Evidence type and proof stage are different questions.

Documented

Built from cited published guidance. HowToFerment has not claimed an original run.

Reproduced

A future label reserved for a recorded run under stated conditions—not a synonym for “researched.”

Compared

A future label for one purposefully varied condition, limited to exactly what was compared.

Before you start

Appearance alone cannot certify food safety.

Use a tested procedure, keep its quantities and conditions in context, and follow its explicit discard guidance. When a manual cannot support a safety-relevant claim, it should say so.
